These homemade garlic jalapeño chicken sausage patties are a tasty, healthy addition to any meal and pack tons of flavor!  They’re paleo, Whole30 friendly, quick, simple, and perfect to make ahead of time!

I’m all about trying out new flavors for my essential “patties” that are daily staples for me and my family.

Sometimes I call them burgers, sometimes sliders, and sometimes sausage, depending on the size and how I’m flavoring them – but really, it’s all the same and all good!

They’re easy to make ahead and freeze or refrigerate to grab whenever you need one for a quick meal.

Something else I’m loving lately?  Jalapeños!  Over the past month I’ve bought (and cooked with) more jalapeños than the entire year before that, if that makes sense.

I think it was the Whole30 that inspired me – I was feeling great even when including some spice in my diet, and decided to just go for it.  My burrito bowls, loaded taco sliders (and of course that guac!) inspired me to go *wild* with jalapeños.

And by wild, I just mean include them in more of my recipes because, well, they just work with so many things.  And now, ground chicken!

Now, don’t worry – I realized I’m not reinventing the wheel by adding jalapeños and spices to ground chicken – that would be silly.

But with my love for a little spice plus my love of “patties”, I couldn’t help but make, and then share with you, these simple homemade chicken sausage patties that will make your Whole30 and paleo meals a lot tastier with minimal effort.

As I said before – you can absolutely make these ahead of time and freeze them for later use.  When I do this, I freeze them individually so I can take out as many as I need the night before to thaw – so they’re totally ready (already cooked and thawed) when I need them.  You can also freeze the patties uncooked (I do this sometimes) if you’d prefer, thawing and then cooking as instructed.

Also, if you’re only making them a few days ahead of time, you can simply store them, cooked, in the refrigerator to grab and throw in with your breakfast or lunch on the go.

As for me, my “perfect” meal for these is the one I have pictured!   Roasted sweet potatoes, sautéed kale, avocado and a crispy fried egg.  But for real – I could eat this meal 3 times per day and never miss a thing – it’s everything I crave!

Garlic Jalapeno Chicken Sausage Patties Paleo, Whole30


  • 2
    minced fresh jalapeños
  • 2
  • 3
    red onion
  • 2
  • 1
    ground chicken
    not too lean
  • pinch
    red cayenne pepper
    or more, according to taste
  • 1/2
    crushed fennel seeds
  • 1/8
  • 1/4
  • pinch
  • 1/4
    sea salt
  • black pepper to taste


  1. Heat 1 Tbsp ghee in a small skillet over med heat. Add minced onion and cook about 30-60 seconds until soft and translucent. Add the jalapeño and garlic, stir, and continue to cook over medium 30-45 seconds until just softened. Remove from heat and allow to cool for a few minutes.

  2. In a mixing bowl, combine the ground chicken with all the spices, salt and pepper. Once cooked mixture has cooled a bit (it can still be warm) add it to chicken mixture (along with any ghee still in the skillet) and mix with your hands until evenly distributed.

  3. Heat a large nonstick skillet over medium heat and add remaining ghee. Form mixture into small patties about 1/2” thick (you’ll make 8-10) and fry on each side 2-3 minutes or until golden brown, adjusting heat to avoid burning the outside if necessary.

  4. Serve right away, or you can freeze after cooking for later use (meal prep.)

Recipe Notes

*The chicken mixture may be sticky, so wet your hands when forming into patties to make it easier.
