I joked on my Instagram stories when I made this tart earlier this week, that it was just about all the wild that I have left in me at this point.

You see, I did something a little bit different here – something (dare I say?!) rebellious!  Rebellious is a healthy-foodie-paleo sort of way, of course.

Here’s what I did – I added 1/3 cup of parmesan cheese to the recipe.  Once again, I added 1/3 cup of PARMESAN CHEESE.  For someone who has probably 1,000 recipes and maybe 2? of them contain dairy, you can perhaps see why I feel like such a rebel.

Are you basically already over it?  I’m not, to be honest – but let’s get real – 1/3 cup of parmesan cheese adds a little extra deliciousness to this tart, and, not to worry – there is in fact a dairy-free sub in the form of nutritional yeast, for those who can’t have dairy of any kind.

For the crust – I used my go-to easy paleo pie crust here, and as usual it was pretty darned perfect.  You’ll see that you can use grass-fed butter, palm oil shortening, or a mix of the two to make the crust.

To add to those options, ghee can also be used in combination with palm oil shortening with great results!  Full disclosure here – I love the all butter version the best!

For the filling, I decided (as always) to go with exactly what I’m craving.  I was totally feeling ham, cheese (yes, that cheese again!) and broccoli vibes and took it all to the next level in this tart.

Funny story – my daughter Diana typically can’t stand ham (or turkey) but wound up claiming this tart as her favorite quiche/tart recipe I’ve ever made.  She ate it for breakfast 3 days in a row and barely left any for ME!

I will say – I have to thank the amazing ham from Jones Dairy Farm that I used – natural, sugar free (woo-hoo!) and yet packed with flavor the complemented all the other ingredients so well!

Isn’t it gorgeous?!  I’m telling you – this one tastes even better than it looks!  It’s perfect to serve to guests for brunch, bring over to to party or even just to make on a Sunday for grab and go breakfasts for the week ahead.

The flaky crust (I swear it tastes like a ritz cracker, so yummy!) topped with the creamy egg/cheese mixture, plus savory ham, onions and broccoli is all so perfect together.

It’s hard to believe it’s actually gluten and grain free!  I DARE you to trick your family with this one (come on, be a rebel with me!) – they’ll have no idea they’re eating a PALEO tart.

Even my own kids second guessed whether I actually made this tart based on how pretty it is (ugh! kids!) so this one is definitely a show stopper!  Time to get going – let’s cook!

Total Time 1 hour 10 minutes

Instructions

  1. Make sure your pie crust is ready to go and baked for 7 minutes until just set, keep the oven preheated to 375 degrees.

  2. Heat a large skillet to medium and add 1 tbsp cooking fat. Add the onions and cook, stirring until softened, then ham and continue to cook another minute, stirring to brown.

  3. Add broccoli and another Tbsp cooking fat, if necessary, then sprinkle with a bit of sea salt and pepper. Stir to combine with ham and onions, then cover skillet for 30 seconds to soften. Uncover and remove from heat. Broccoli should be bright green and crisp/tender.

  4. In a mixing bowl or measuring cup, whisk together the eggs, coconut milk (or heavy cream), parmesan cheese (or yeast) salt and pepper.

  5. Place the tart pan on a baking sheet and fill crust with broccoli/ham mixture. Pour egg mixture over the top using a spatula to even it out.

  6. Place baking sheet (with tart on it) in the preheated oven and bake for 22-25 mins or until center is just set.

  7. Remove from oven and cool 5 minutes. To serve, remove bottom of tart pan from the sides, slice into 8 pieces. Store leftovers tightly covered in the refrigerator for up to 4 days. Enjoy!
